SC - Stroganoff

I am cooking my first event, and want to include some vegetarian dishes.
I'm not a vegetarian so I asked some one in the group who is and she
suggested green pepper stuffed with barley. 

I think I read somewhere that green peppers are not period, so I was
thinking of just making a barley dish, but I don't know of any recipes for
a barley dish.  

Does anyone have any suggestions for a barley dish, or some other
vegetarian recipes.  I already have salad, rice(plain no chicken broth),
carrots, mushroom pies(made with cheese) , and Fennel Soup on the menu.
