Emmanuelle of Chenonceaux asked:

I am interested in doing research on period cheese making and dairying.
Does anyone have reccomendations for period sources about this. I am
looking for recipies, if possible, but anything would be interesting.
I have a copy of Menaigier de Paris, what others should I see?

You might try these files in the FOOD section of my Stefan’s Florilegium:

cheese-msg (58K) 11/ 3/97 Medieval cheese. Recipes.
Cheese-Making-art (30K) 9/29/97 "Cheese Making for the Compleat Novice" by
                                       Lady Aoife Finn.
dairy-prod-msg (69K) 12/22/97 Dairy products. milk, butter, curds, cream.

These files while not so directly on cheese and dairying might also be
useful:
BNYeast-art (14K) 4/24/97 "A Brief Note on Yeast" by Katerine Rountre.
yeasts-msg (31K) 11/19/97 Medieval use of yeast. Using it in the CMA.

This file in the ANIMALS section might have some useful info, since you
mention dairying and not just milk:
livestock-msg (48K) 11/23/97 Medieval livestock. Pigs, cattle, sheep.

I am one of the early folks. I joined within the first few days. Within
a few days, I switched to the digest form, in part because the sudden
surge of introductions swelled the number of messages to unmanageable
hieghts. I do have many of these introductions filed, but I am not
going to put them in my files. :-)

Stefan li Rous is a minor landholder in Yorkshire in the latter years
of King Stephen’s reign. (1150)

Mark is an electronics engineer with Motorola doing PCB design on
testcards used to test new Motorola/IBM processors and some product
design such as the Motorola G3 processor card in Apple’s new computers.
