"I" always thought there were just two kinds, the kind you raised for meat and
eggs,  (domestic, males called roosters) and the kind you didn't let the kids
feed, if you liked the kids, (game, the males called cocks).  That seemed to
be the two kinds my 'cajun grandfather raised.  
Ever see "Roots", or watch the Carolina Gamecocks play?  
As for Cornish game hens, my bet is that they were a "game" variety that
became a faddish delicacy at one point, then began to be raised for the table.
