You have the gist of it, Adamantius.
Dairy animals almost always produce young in the spring, a good husbandman
will plan it that way, and the milk is mostly available for human consumption
from mid-summer (when there may be a drop in production from heat stress) to
late autumn, winter is usually the dry season.  Even with today's dairy
breeds, that produce nearly year round, there is a drop in production during
the winter.
