That is a speculation of Charles Perry's. Since neither Charles nor anybody
else has actually made the stuff in recent centuries, so far as I know
(Charles got as far as a precursor to Murri, if my memory serves me
correctly), we have no empirical evidence. His argument seems to be that
long fermentation processes are likely to produce carcinogens--which I
don't find terribly persuasive.
