Don't know for a fact, but it might be the authors way to specify that
the milk must be fresh, not sour.

I don't know which the author meant, but being from a dairy farm, I know we
often used the milk hot and fresh from the cow.  It seems creamier and tastier
that way, and the cream whips better.
