Stefan,

 A whole garlic is called a head. A single garlic section is called a
clove. To roast garlic today, most people slice the top of the head of
garlic off and throw it in the oven, plain, foiled, or in a water-soaked
clay "garlic roaster" until the meat of the individual cloves is softened,
so that it squeezes out from the papery covering much like toothpaste, onto
crackers or whatever. Cloves, as in the dried flower buds we stick in hams
and fruits are a whole different beast, though the two can go well together
in some dishes. Hope this helps.
