Adamantius reminds us of the chic title of cuisiner (my personal favorite,
and the one I use myself).
>From Chiquart, the cuisinier for the Duke of Savoy in 1420, we have a list
of his kitchen personnel. Check this out! It actually gives quite a few
clues into the organization of a real 15th century kitchen.

Gillet de Rumillie, cusinier, livree de la duchesse [in the service of the
duchess herself]
Collet, cuisinier, livree de la duchesse
Mestre Chicart Amiczo, cuisinier, livree de l'hotel [in the service of the
dukes "house"]
Mestre Pierre Sailler, cuisinier, livree de l'hotel
Jehan Manget, rotisseur, livree de la duchesse ["roaster" for the duchess]

with fat, I guess]
