Wow, glad to see so many replys to this question. I always had a problem with
the "people in the middle ages ate tainted meat" theory.  And I do think Sculley
does a good job in discussing the regulations butchers had to follow during the
time period. I don't think all these regulations would have come to be IF people
ate bad meat.
