Les' Chicken in Coconut Sauce
(copyright 1997 L.J. Spencer, Jr.)

4 chicken breasts, deboned
3 tablspoons butter
1 medium onion, halved and sliced 
1 green pepper, seeded and sliced 
1 can coconut milk (I use Goya brand)
1/2 cup light cream or half and half
salt, to taste
pepper, to taste

Melt butter in a medium frying pan. Saute onions and green peppers until
onions are trasnslucent. Remove and set aside onion mixture leaving butter in
pan. 

Over medium heat suate chicken breasts until they begin tobrown slightly.
Return onions and peppers to pan. Add remaining ingredients. Reduce heat .
Simmer slowly until suace reduces and thickens somewhat. Adjust seasoning.

Serve over a bed of cooked Jasmine rice.
