Will Irish Oaten Biscuits suffice for your Scotch Tea-Cake-Cookie-Something?
4 oz. flour
1/2 tsp salt
3 oz lard
4 oz fine rolled oats
2 oz caster sugar
2 Tbsp milk (approx)
Sieve the flour & salt together, and rub the lard in until the mixture is
crumbly. Add the rolled oats & sugar. Mix with just enough milk to make a
stiff dough. Roll out thinly & cut into round biscuits. Bake at 350 F., 180
C, Gas 4 until pale brown around the edges.
