I would try these files:

pastries-msg (48K) 1/ 6/98 Medieval pastries. Recipes.
Period-Pies-art (33K) 9/29/97 "Raising a Coffin or the Fine Art of Making
Period Pies." by Lady Aoife Finn.

These might also be useful, although coffins are not a main subject in them:

bread-msg (100K) 6/12/98 Medieval breads and grains.
breadmaking-msg (117K) 5/27/98 Period bread recipes and re-creations.

Recently, there was a discussion here on Ember Day Tartes. I just noticed that
this file is an article on exactly this.

To_Mke_A_Tart-art (20K) 11/30/93 Article on medieval recipes using a cheese-
                                      onion tart as an example.

My files are at: http://www.pbm.com/~lindahl/rialto/rialto.html
