Shellfish are specifically banned because they are cooked in their own
excrement.  This is one of those laws that seems like it was based in
some common sense following a bad time with some bad crustaceans!

Burying dishes that have been used for the wrong purpose takes 7 years. 
There are some amusing stories of people out in their back yards trying
to find the family china because they were moving! 

I have found that some kosher laws are up to interpretation, just like
the rest of the Talmud.  I have worked with many Rabbis during Kosher
meals (especially when I worked at a hotel).  For example, you cannot
serve meat and milk products in the same dish, for the more orthodox, not
even in the same meal.  Some Rabbis will tell you the same is true for
chicken and eggs, and some will say that it doesn't matter.  There is
also a difference in foods that are considered kosher and Kosher Foods. 
The latter are prepared and packaged under rabinical supervision, the
former are just the things that are appropriate.  (I remember travelling
during Passover with some kids from my High School that had to take
Kosher Cokes with them!)  But the Rabbis always liked me, because I was
the only one in the kitchen who looked on the whole production number of
doing Kosher meals as a learning experience, and not just a big hassle. 
(New utensils, disposible foil roasting pans, foil covering every work
surface, etc.)
