Some of all the above, plus freezing, Stefan.  If frozen they should be used
within 2 to 3 months.  They actually keep longer if they are boiled then
smoked.  Canning them in a hot water bath seems to make them last forever so
long as the seal is intact.  Hanging them to dry is iffy, and depends a LOT on
the weather.

If you make onion sausage, do NOT freeze them.
