The head of the hog contains three delicacies:
The ears
The tongue
The Brain
The ears are carefully cleaned and boiled until tender then boiled in a
pickling brine with the feet and canned.

onion or sliced, parboiled, battered, and deep fried.
The brain was reserved for our knacker. He never failed to have a breakfast
