Parsley root is available here in the Phila PA region in well stocked grocery
stores, in good produce places, and at farmer's market produce stands.  This
is actually a good time of year to find it-- mid-late summer is worst.  Call
around.

If you do have to substitute, forget about parsnips-- use lots of parsley
greens or celeriac (which is celery root).  While parsley root LOOKS like
parsnip, it TASTES like strong parsley.
