...and then there are those wonderful (if extremely few and far between) moments when you do make a simple-substitution creation (like, well, I'll use this sauce for chicken since I don't have goose) and then, later, find a similar recipe that reads "...or else chickens in the same fashion..." and realize that you really DID make a period dish!

Me, I tend to cook as much perioid food as I do period food, ONLY because I haven't fleshed out my library yet... but I'm working on it...

And keep this also in mind:  Letting the best become the enemy of the good is defeating the purpose.  Far, far, far better to bring your perioid creation (and label it a creation) than to bring potato salad.
