although my current favorite is a "gold" variety which not only is yellowing
in color but also tastes "buttery". :-) There are many varieties of potatoes
which come in many colors, both skin and flesh, among which are golden, red
and blue.  The white potato is the potato of choice in America and many parts
of the world but if you ever get the opportunity to be in a Peruvian potato
field at harvest time you will literally see a rainbow of color. White is only
one of many. ;-)
