Does a modern CEO of a major corporation handwrite--or even (almost said
'type') word process his own letters?  Of course not!  It's a status
thing.  Chiquart was an important person, and if the Prince Bishop said
to write the cookbook, he'd certainly have a clerk available to do the
dictation and make the finished copy.  Chiquart was busy cooking.
