My friend Geoffrey is doing some research into period brewing.  Admittedly, most of his documentation is late period, it is still pretty cool.  He was wondering himself how they dealt with temperature.  He explained to me one time that there are different names for the stages of water boiling.  I don't remember exactly what he said, but, I do remember him saying that.  I am going to forward this to him and see if he will write something about this if you are interested.
