I've always used zucchini (courgettes) to replace the medieval 'zucche',
especially the pale green ones - marketed here for some reason as 'grey'.
When you have a garden, these are very easy to grow, but you have to check
every day or so and look under the leaves, because left to their own devices
they turn into prize green zeppelins. And if you grow them yourself, you can
stuff and fry the flowers (yum).
