Actually, they all are!  Even the 'indoor' kitchens of our period were
open fires, except for the ovens.  The trick is for us wonderfully
spoiled moderns, so used to our gas or electric stoves, not to mention
microwaves, to re-learn the techniques.  For those of you who really know
how to do this, I'd love to have tips.  You know, like: turn off your
electric burner a little while before the food is done, because the
residual heat from the burner/coil will continue to cook the food.  Now: 
you give me one for a campfire!???   ;-)
