This is correct. According to The Medieval Kitchen (Yes! I finally got it.
:-)) Le Manegier was originally written on a parchment scroll.
Many times manuscripts were commissioned by a noble for his personal
libraries. Such manuscripts were handed down generation to generation. Most of
the published copies of these rare manuscripts were printed in the 1800's,
thereby giving us a glimpse into the world of medieval cookery.
