Checked back in my old copy of 'Stalking the Wild Asparagus' and the author
stated he had "...made good sirup and sugar from all the large species of
maple growing in this country.  This includes those which have been introduced
from foreign lands, such as the Norway Maple (A. platanoides) and the
Planetree Maple (A.pseudoplatanus) as well as the indigenous species."
