Some information from “Food” by Waverly Root:

under Maple: (p242)
Maple syrup and maple sugar are perhaps the only foods which are
produced nowhere except in North America. ... Attempts have been
made to produce maple sugar in Europe, by transplanting the
American Sugar Maple, A. saccharum, to that continent, but without
success, for it isn’t the tree which produces the sugar (the
European Norway Maple A. psudoplatanus, have been used to make
sugar too - in the United States - though they are less rich in it),
it is the climate. Only in the northeastern United States and the
adjacent areas of Canada is the weather just right to make tapping
the trees worthwhile.

She has another three pages which would be worthwhile reading for
those interested in maple syrup and sugar.
