Unfortunately, it turns out that "Memoirs of Gluekel of Hamel" is post
period, although Phillipa mentioned that "Cholent (French for
slow-hot) has been around since the Middle Ages," which may still explain
what the Jews did for their meat.  All in all, it wouldn't matter if the
meat couldn't be sold over the weekend, since the Jews at that time would
not have been cooking from Friday at sundown until the emergence of the
first three stars on Saturday night.
