Brandu, you also left out the mandatory oyster crackers on the
table, which are added according to individual taste.

For a space of almost a year, there was an "authentic" Cincinatti
chili parlor in North Dallas, complete with coneys and a seat from
the old ballpark plus other memorabilia of that distant area and the
Cincinatti chili parlor phenomenon. Living at that time with a
couple who had already introduced me to the homemade version --
based upon a commercial spice mix -- I found myself there fairly
often. Not often enough, actually, now that the place has closed ...

As far as the spices are concerned, the amount of cinnamon appears
to vary greatly from one rendition to the next. Jeff Smith ("Frugal
Gourmet") includes at least one recipe in his works ("Cooking with
America"?)
