Simply because the taste is reminiscent to an allergen doesnt mean that you
will positively be allergic to them, as the tongue registers sour, sweet,
salty and bitter: the senses of smell and sight supply much of the input of
taste, to whit- a normal experment in both psychology and cooking have a
neat demo of taking plain gelatin or sugar candy, flavoring it with mint,
vanilla, lemon and cherry, but instead of the traditional colors, they color
the vanilla red or blue, and mint yellow [anything, just not the traditinal
color]. invariably people cannot identify the taste because the color is
skewed. Another facet of the same test is to plug the nose before tasting
the substance.

If you have any desire to try the sumac, take it to the allergist and have
him test for an allergy. As a matter of fact, it might be a good idea to do
this for a range of substances, because if you are allergic to a synthetic
flavor, then there might be a psychological component, because if i remember
correctly, synthetic lemon and lime are both coal oil derivatives with no
natural component[for the cheap stuff. the real stuff will use some natural
components deriven from the essential oils from the peel]

mind...i went to the hospital because somebody thought they could fish out
the raw mushroom from the salad and feed me the 'mushroomless' salad.]
