Once I worked in the kitchen of a "cooking school" (i.e. large scale
cooking). All the toys: multi-tier ovens (IIRC they took half a dozen
cookie sheets all in one go), the big (50 liter?) electric cookpots with
precise digital temperature settings, cold-room, lots of space, etc.
Nice...
OTOH I _would_ enjoy cooking in a totally period setting some time. Not
just my own camp-fire stuff, but a feast.
