SC - Pennsic Pot-luck

This reminds me of one of our dinners on the meal plan at Pennsic last
year:

Val, my smart alec sca-son and student, an avowed carnivore, was on a tight
budget the entire war. When it was his turn to cook (along with a male
college student), we were rather surprised to see the finished dishes.
First I should tell you, the rules were: A Meat, A Starch, A Vegetable, and
optional dessert, feeding 35 household members.

So what we got were:   Beefy Mac and Cheese, and corn chips(the vegetable).
There were Oreos for desert.

Now, I think I'm going to change the rules slightly to require period-like
food. He could have made lozenges, hedgehogs or meat balls, and salad for
roughly the same price. But it wouldn't have the same entertainment value!

Actually, meatloaf as we know it began during WWI when there were food
rations and such. Personally, I take the veggie leftovers from the
fridge - no matter what they are - and puree them in the food processor.
Add an egg or two, and some grain product (corn flakes, oatmeal, bread
crumbs) and mix with lean ground sirloin. Makes a great tasting
meatloaf, and those in my household who don't "do" vegetables get all
the vitamins and such without actually tasting them. <grin!>
