I have a friend who has the same allergy.  I found a review of a great
new Chinese oyster sauce product.  It used mushrooms as a flavor base.  I
know you cook all sorts of foods, and you're in an area that has access
to many products, so, just a word of warning.  Brush up on your Chinese
for "mushroom'!
