.  If you cut the bean open, you may get
more flavor, but then you get grainy black junk in the mix.
The grainy black stuff is the seeds. You can cheat and wrap the beans in
filter paper to keep them out of the mix, though I have found they tend to
get mixed in with the dead yeasties and get left behind in the racking.
