These days, we have a practical solution... For our large feasts (in the 250
- - 400 people range), we *HIRE* professional 'dish pigs'. 2 of these for 5
hours each at the commercial rate (very reasonable) sure takes the load of
the cooks and their helpers and gets built into the budget.
