I would agree with checking with your site contact, especially if it 
is a church you will be using.  For the most part, I assume that 
everyone else is correct, in that a dry site is just one where you 
may not SELL alcohol.  Some churches are different though.  It is not 
acceptable to have any form of alcohol on the premises of my church, 
cooked or not.

BTW, no, not all of the alcohol cooks out.  We won't go back to the 
horrendous discussion of catering to allergies, but if someone asks 
if there is alcohol in dishes and they have been cooked with wine, 
beer, ale, or whatever, the answer is YES.
