Calendula, or pot marigolds, are yellow to orange.
Perhaps you saw Campanula, or Bell flowers which are blue, purple or white?
A brief summary of the calendula discussion: Calendula (dried flowers) are
definitely documented to period for use in soups and stews. We are currently
in need of a better source than my memory for their use as a substitute for
saffron in period, and agreed that they would not be a good flavor match for
it. Nothing is as wondrous as saffron itself.
