As one of the persons who had the extraordinary privilege of attending Master
Adamantius' EK Crown feast this past weekend, I can say beyond a shadow of a
doubt that Cuskynoles are one of the sublime foods of the universe, having had
the privilege of eating them. :-)

The bottom line, IMO, is that the pleasing of mundane palattes is not the
purpose of medieval recreation.  And medieval food is just as tasty and edible
as modern food.  In fact, more so in many ways considering the sweet cardboard
flavor inherent in much America cooking as practiced today. 

I ALWAYS provide medieval feasts at every event where I produce except for
rare occasions (e.g. substituting whole emus for baby rocs :-)) I have never
had ANY complaints about the over all quality of any of those feasts.  I have
not found a need to compromise authenticity in favor of modern palettes.  Many
of the local shires specifically use our shire's events as a good place to
bring potential new members (Plug: Will's Revenge, June 19-21).  We have never
lost a member because the food was weird.

At a recent demo only one person refused to taste the stuff in the cauldrons
on the fire pit.  Those that did loved it without exception.  The moral of the
story is period food is unquestionably good.  Bad food is almost always the
result of inadequate cooking skills or flawed redactions.  Period food
produced at the hands of a skillful cook would be beneficial in swaying
potential members to join IMHO.
