As a matter of fact, I have always employed a bouncer for big events. It
just happens that on this occasion, my usual door porter (a good friend
whose talents are more for expediting work than sauteeing: he's a former
non-com in one of our armed forces, and knows how to Get Things Done)
was fighting in the Tourney. Something about serving his Knight for a
change...;  ) 

But yes, crass as it may sound, if I had my attention diverted from
necessary tasks once by someone who didn't really need my attention
there and then, I had it happen at least a hundred times. 98% of the
questions could have been easily answered by reading the posted
materials, but people honestly seemed offended at being asked to get the
information in any way other than a face-to-face consultation with the
Person In Charge. At one point I lost my temper a bit with someone ( I
think it was "Just what are cuskynoles anyway?"-boy), and looked at the
clock, and said "You've just wasted my time to the equivalent of one
percentage point of the quality of dinner. Read the notes."

A big strong sergeant guarding the kitchen door (although I suspect it
is the door to the Hall that Le Menagier is speaking of) would have been
of incalculable help, and I highly recommend having one or more for
large events. BTW, I see now who should have served that purpose, but at
the time I didn't think of it.

Ah well, that's the way the sanity crumbles.
