SC - wanted: a marinade for spit roasting an autocrat

(warning! while a lot of things went right for "The Grand Tourney of the
feast of St. George", they were not in the kitchen. this is mainly
venting and wanting advice on how to avoid this happening again (to me at
least))

This last weekend the shire of Oakheart held a pas style tourney for our
annual Feast Day of St. George, and I was one of two people in charge of
the inn. The other doesn't cook, so I was in charge of the recipes. Our
autocrat, hereafter known as Tamar, gave this event a big build up to the
shire (almost sounded like a mini Lillies, even) and asked that the inn
be held both Sat. and Sun. (leftovers on Mon. morning). That is,
breakfast, lunch, and dinner both days. Plus a feast on Sun.(another
friend, Lady Snow took that job) Anyhow, Tamar was expecting a huge
turnout, as it was memorial weekend, and the royals had said, publicly,
that they were coming. So I planned the meals for around 100 people,
expecting to have a BIT over, since I ran out of food too early on my
last inn.Since my personal budget was (and is) really tight, Tamar
insisted that she would get the food cheaply, whatever we needed. On
paper, that was fine - however!
Our menu was thus:
both breakfasts;
orange juice (not gotten, claimed never was told), coffee(brought by
myself), milk, baked french toast,scrambled eggs, and Oatmeal (not eaten)
both lunches:
pork rolls * (two quart containers still holding mixture at the end of
event) Lombard Chicken Pasties * (our best seller), and mushroom pasties
* 
sat. dinner:
beef y-stewed (asked for 20 lbs, got 63! lbs of beef, fortunately I
brought my own spices, otherwise, who knows what weird amounts I would
have gotten on those)
rice (left for a moment and came to discover that no-one else helping
knew that you have to boil rice, ended up with a starchy taste to me) and
Elizabeth's a simple dish of peas [recently on this list](without the
coriander, was told,"well, I told you I couldn't find it. oh, and from 20
leeks ordered, we received 3 cases!)
Sun dinner: chicken in sweet sauce [also from this list] scotch broth,
and armored turnips (between the amount of cheese she got for both the
inn and the feast, you could of had a cheese bath with just the
leftovers!)
I was not the only one really pis... miffed, she also forgot to buy Lady
Snow's lettuce and sour cream. and Cicely's strawberries for the fruit
and vegetable stall.(and probably things I was too mad to notice.) as for
the turnout, it was moderate, so while everyone ate lunch, and 1/2 ate
breakfast ( the toast and eggs went over really well) No one ate dinner
at all, which means we have lots and lots of food left (anyone hungry?)

ps. the beef y-stewed redaction was really tasty, too bad the cooks are
the only ones that found out!~well, except for the 1/4 in. layer of
grease we had to skim off because of the grade of the meat........
