That's pretty much how we did it for Michealmass Feast earlier this month.
We knew the attending Prince didn't like onions, so we set aside some of
the meat dishes before adding the onions and served him separately. Neither
liked mushrooms, so they were limited to one lovely dish because the
baroness (myself) loves 'shrooms. We know the baronial allergies (few) and
dislikes (few), so just had to request of Their Highnesses what they would
and wouldn't eat, and what if anything they particularly liked. We knew
these preferences before we set the menu, as They had the courtesy to let
us know shortly after they stepped up in July that their travel plans
included our Michealmass Feast. As long as there is a sufficient selection,
most people will get more than enough to eat.

One coronet feast I knew there was a visiting from West Kingdom vegetarian
in attendance (I'd heard him complain during a limited-selection feast six
months earlier), and knew he liked middle eastern, so it was easy to make a
couscous with fruit and nuts dish for him during the one remove he was
going to find little to eat (that feast was Italian). He didn't ask for
special consideration, but I don't like anyone carping after one of my
feasts/meals.

We do not make special dishes at the last minute, but are more than willing
to accommodate special requests well ahead of time.
