I am glad that leaving out things from recipes worked well for you and I
commend both the Montvale cooks and yourself for taking the time to cater to
individuals with special needs but I still think that the ideal situation
would involve finding recipes that did not contain the offending ingredients
rather than leave them out. 

For instance, at the recent Siver Rhyll event (Harvest Melee), Lady Allison
had mentioned the possibility of attending. Since she is allergic to pepper in
any form, With the exception of one dish, I simply did the entire menu from
recipes which did not call for pepper as an ingredient. There was a wheat
allergy present and the only dish that they could not eat was the bread and
the manchets. Vegetarians had to avoid 3 dishes (one in each service). No
other allergies were brought to my attention.so I did not feel compelled to
anticipate them. Food aversions were ignored. Ingredients lists were posted
including the clipped labels from commersial preparations.

So although it is possible for SCA cooks to cater to persons with special
needs by tweaking and altering period recipes, I still find it much easier to
use the recipes as written and just avoid using more than one or two of those
that contain offending ingredients.

Each Kitchen Steward developes their own stategies for dealing with the fickle
palattes, with each system containing both good points and bad points. The
secret is to provide a well balanced, properly seasoned feast with a choice of
food that is not seasoned or prepared all alike. How the cook achieves this
and still maintains some semblance to period food is an individual process.
Successes are to be lauded. :-)
