Cider is a slightly fermented beverage with a little fizz made from apple
juice. It contains up to 3 1/2 percent alcohol or in the case of beverage
alcohol cider it can contain 5 1/2 per cent alocohol. Beyond that range cider
becomes apple wine and is made like any other fruit wine.

There is much controversy over the cider bought in supermarkets which bear the
label but are actually fresh pressed applejuice. If true cider is to be had
from supermarkets you must leave it at room temperature for a couple of days.
When bubbles start to form, you have cider. Your best bet is to buy your cider
from fruit stands or directly from orchards. The ir product will be infinitely
tastier than the insipid juice marketed under the guise of cider that is
available in most supermarkets.

Tibbs, a local orchard, makes cider that is crisp and clean, with a brilliant
taste of fresh apples, slightly tangy with  flavors reminiscent of pineapple,
citrus and strawberries followed by a slight fizz and a long finish. Not at
all like the coyingly sweet garbage available at the supermarket.
