The reason you find so much of this in Platina, is that he was a
physician.  He is talking of the humoral theory results of the food(s)
and not, necessarily, about any actual physical observation of symptoms. 
When he does memtion a friend who reacts adversly to a particular food,
it may be that that friend had a particular condition.  It would be great
fun to have a mundane physician read Platina, and give us a list of
diagnoses.
