Greetings the list, 
I am looking for suggestions/recipes for a period sausage.  Specifically a 
sausage that will taste good boiled (without additionally being fried, 
grilled, broiled...).  
I know black pudding and haggis would mostly fill the bill, but I am fairly 
sure the local crew would not appreciate (read not eat) the pudding. I can 
get liver, heart, and kidneys, but lung and stomach (of any 4 legged) is 
hard to come by. I have thought of substituting beef-runners but have been 
unable to locate those in town (Denver metro area) and have procrastinated 
too long for Mail-order to be an option.  
I like the bratwurst recipe out of Sabine Welserin, but (as the name 
states) it is meant to be finished by roasting/frying...  
Please post or e-mail suggestions and (PLEASE) include the original or at 
least let me know where the original recipe may be found.
