Last year my son Valentine completed an 18 month program at the Chicago
Culinary Academy.  It started with "Knife Skills" and followed through
with Pastry, Soups, Entrees, Veg, Desserts, and everything that -I- could
think of from Julia Child to Better Homes and Gardens.  Going in, he could
do real good macaroni and cheese casseroles - coming out he can plan,
budget, buy, and cook absolutely anything.  And this is a boy with severe
dyslexia - we chose the program because of it's hands-on rather than
read-and-write approach.  

So if some schools aren't good, let me tell you that some ARE.
