Agreed based on the data we have so far, or rather lack of data. The only
things that my cursory research has shown that can be stated with any accuracy
is:

1. They raised swine in the middle ages.
2. A distinction was probably made between pigs and hogs at least as early as
the reign of Charlemagne..
3. Lard was most likely a valuable commodity obtained from some pigs in
Platina's time.
4. French people used hogs for sides of lard (e.g. fat bacon) at least in the
time of Charlemagne.
5. Pigs so fat that they couldn't walk or defend themselves were probably an
unusual phenomenon.
7. Period illustrations do not provide clear pictures of obvious swine except
in a few cases. In at least one of those cases, pigs are shown to be portly.
8 Pig slaughter most likely occured 2 to 3 months later during the period than
it did 2 cneturies ago to modern times.
10. Swine fat adn bacon were used in period cooking.
11. Hams, bacon and sausage were probably very similar to many of those
available today.
12. Lard was one of the by-products of hog slaughter.

Does this summation appear to be accurate?
