That may be only a little out of the SCA period, but it is a long way
post-medieval. The medieval gingerbreads I am familiar with are basically
bread crumbs and honey, plus spices. This sounds as though it might be
descended from those, with changes--in part due to the drop in price of
sugar by 1664.
