re: making your own bread:

I have found that while making your own bread may be cheaper than buying
the nice boutique bread at full retail price, we;ve been fortunate enough
to have inroads to bakers and bakeries, and be able to get it for about the
same price as the raw ingredients. 

I still wonder how these folks manage to bring in "sumptuous" feasts at so
low a price...I am a VERY good shopper, but refuse to cut corners by
subbing "olive oil blends" for olive oil, margarine for butter, etc.
Anyplace where quality suffers, I assume my diners have the same mindset I
do, and would rather pay a bit more for quality ingredients. We use fresh
vegetables and meat only, never frozen. We buy bulk, but again, only when
the quality wont suffer.... We dont buy organic unless it really makes a
difference. We buy from the producer whenever possible. 

if anyone is interested in seeing a budget sheet from a past banquet, I'd
love to see where we could have trimmed costs....
