OK, it's already Thanksgiving and my lord husband and I are engaged in our
annual debate over the potatoes. He is craving potatoes made by a recipe
his Canadian mother used when he was a kid, figure late 60s early 70s time
frame. He thinks she probably got it out of some magazine (he pulled "Better
Homes and Gardens" out of dim recollection). The ingredients are potatoes,
boiled; sour cream and cream cheese mashed therein; and a topping of
buttered breadcrumbs, the whole thing then put under the broiler.

Now, you would think with that much info I could just wing it, but I've
tried that and the results haven't pleased him. So, anybody have a recipe?

Caitlin, I have a recipe at home for exactly this. Its not from Better Homes
and Gardens (although a similar one may be). It is from Canadian Living (one
of my fave mags) and they can be found at:

As for the potato recipe this is what I do.

Peel red or Yukon gold potatoes. Boil and mash. Add cream cheese, a little
milk, 1 egg, some chopped red pepper and red onion and salt and white pepper
to taste. Whip until passive. Place in a buttered (I use cooking spray)
casserole. Melt some butter and add to bread crumbs and parsley and top
casserole with same. Bake at 325 till golden and voila!

I realize that this is not a formal recipe but I rarely use them once I try
something and tweak it my way. If you desperately want the formal
ingredients and method, might I suggest getting on-line with C.L. and going
to their discussion group or archives.
