SC - Castrated bulls

I'm not a rancher (nor do I play one on television), but it was my
understanding that a bull is a male (as in alpha male) bovine animal,
that males castrated before sexual maturity, generally destined for my
plate, are steers, and that males castrated somewhat later to produce
docile work animals are oxen. This may be a generalization, but it seems
to work for practical purposes. 

But yes, I'm aware steers and bulls are not the same thing. The vision
of Ernest Hemingway running with the steers at Pamplona, to say nothing
of an unfortunate cowboy slapping at an enormous bull, saying, "Git
along, little dogie!" illustrate the difference pretty well, I think.
But they're both big and brown, with horns, so some confusion of the two
is reasonable, I guess.
