Rosalyn, You ask some interesting questions. I don't think I can answer your
questions directly, but you mentioned being eager to learn. There have been
some wonderful discussions about yeasts and breadmaking here on this list
in the past with some wonderful bread recipes and instructions given out,
particularly by Bear. Much of this info is in the following files in my
Florilegium.

BNYeast-art (14K) 4/24/97 "A Brief Note on Yeast" by Katerine Rountre.
bread-msg (131K) 9/ 2/98 Medieval breads and grains.
breadmaking-msg (146K) 9/ 4/98 Period bread recipes and re-creations.
yeasts-msg (53K) 9/11/98 Medieval use of yeast. Using it in the CMA.

My files can be found at: http://www.pbm.com/~lindahl/rialto/rialto.html

Please pardon me if these files all well known to you already.

Does anyone have any information showing bread bowls were actually used
this way in period? I like breadbowls. I was just wondering if there was
evidence for this. I know there is evidence for bread trenchers.
